Chocolate-chocolate Chunk Muffins



Last Tuesday, lilly baked muffins untuk di bawa ke usrah dan juga untuk Ammar & Aisyah makan. Ammar siap bawa 2 ketul muffin ke sekolah esoknya. Dalam sibuk jaga Anas yang nak berdukung je, lilly kena cari juga masa untuk cuba new recipe n post dlm blog. Bagi lilly ianya satu terapi untuk hilangkan rasa penat menguruskan rumah dan anak-anak. Lilly ambil resepi muffin ni di blog Mamafami.


Chocolate - Chocolate Chunk Muffins

Ingredients :
6 tablespoons unsalted butter
4oz bittersweet chocolate, coarsely chopped
2 cups all-purpose flour
2/3 cup sugar
1/3 cup cocoa powder, sifted
1 tablespoon baking powder
1/2 teaspoon bicarbonate soda
1/2 teaspoon salt
*1 1/4 cups buttermilk
1 large egg
1 teaspoon vanilla essence
(To sour milk: Use 4-1/2 teaspoons white vinegar plus milk to equal 1-1/2 cups)

Method :

1. Layer the muffin cups with papercups. Set aside.
2. Melt the butter and half of the chopped chocolate together in a bowl over a saucepan of simmering water; or do this in a microwave. Remove from heat.
3. In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt.
4. In another bowl, whisk the buttermilk, egg and vanilla extract together until well combined.
5. Pour the liquid ingredients and the melted butter and chocolate over the dry ingredients and, with the whisk or a rubber spatula, gently but quickly stir to blend. Don’t worry abo ut being thorough – a few lumps are better than overmixing the batter.
6. Stir in the remaining chopped chocolate.
7. Divide the batter evenly among the muffin cups.
8. Bake for about 20 to 25 minutes, or until a thin knife inserted into the center of the muffins comes out clean.
9. Transfer the pan to a rack and cool for 5 minutes before carefully removing each muffin from its mould.

Puding Roti Epal Karamel



Assalamualaikum wbt. Alhamdulillah tak sangka Puding Roti Epal Karamel, resepi baru lilly tokok tambah dari resepi asal Puding Roti Choc Chips dan Pisang menjadi dan sedap. Surprisingly, MH pun suka puding roti ni walaupun lilly sedia maklum dia memang tak suka bread pudding.
Ammar dan Aisyah terus je minta nak makan puding roti ni bila dah siap bakar. Tak sabar nak tunggu sejuk betul-betul terus mintak nak ngap. Mungkin kerana bau wangi gula karamel membuatkan diaorang tak sabar nak makan.
Perfect combination! Puding roti epal karamel ini rasenya memang sedikit manis tetapi apabila dimakan bersama potongan epal hijau yang masam memang sedap.


Puding Roti Epal Karamel

Bahan-bahannya:

12 keping roti - dibuang kulit
2 cawan susu segar/long life
1/2 cawan gula
4 biji telur
1/4 cawan minyak jagung
1 sk esen vanila
2 sudu besar mentega
1 cawan gula - boleh kurangkan jika suka
2 biji epal hijau - dibuang kulit dan potong dadu
10 biji kurma
Gula ising


Cara membuatnya:

  1. Potong tepi kulit 9 keping roti dan koyakkan. Rendamkan roti dengan susu di dalam satu bekas selama 1/2 jam.
  2. Pukul telur dan 1/2 cawan gula hingga kembang. Masukkan esen vanila dan minyak jagung. Kacau rata.
  3. Cairkan 1 cawan gula di atas kuali hingga keperangan seperti buat gula hangus. Masukkan mentega dan epal yang telah dipotong dadu. Kacau rata. Tutup api dan terus curahkan karamel ke dalam no 2 dan kacau.
  4. Kemudian masukkan bancuhan tadi di dalam bancuhan roti. Masukkan kurma yang telah dihiris dan kacau rata. Ketepikan.
  5. Ambil 3 keping roti dan koyakkan dan susun dalam bekas membakar. Curahkan no 3 ke dalam bekas. Pastikan semua roti tadi terendam.
  6. Bakar pada suhu 180 C selama 40 minit atau sehingga keperangan.. Keluarkan dan sejukkan. Ayak gula ising di atas puding jika suka.

JJCM - Tokyo Restaurant

It's Thursday! Dapur lilly di Riyadh closed again....

Alhamdulillah dapat juga makan di Tokyo Restaurant malam Khamis lepas. Itupun setelah melihat pic cik Yan di FB dan blog kak zura. Ingatkan dah tutup Tokyo Restaurant ni. Tapi punyalah ramai orang beratur menunggu nak makan Japannese food di Riyadh ni.

Zurich-London and Ole-ole. Thank you laling.

MH ada training di London last week. Dah dekat-dekat tu bolehlah berjalan di negeri Europe lain. Bila lagi nak merasa berjalan di tempat orang kan.

Sian MH jalan sorang-sorang di Zurich sebab lilly tak nak ikut. Pikirkan Muhammad Anas yang baru 2 bulan lebih dan masih lagi BF.

Chocolate Bottom Banana Square

Jalan-jalan blog kak Shidah ternampak resepi Chocolate Bottom Banana Square ni. Nampak senang je nak buat dan pisang pun memang ada. Apa lagi lilly pun buat semalam untuk di bawa ke usrah.

Chocolate Bottom Banana Square

Description: Chocolate swirl banana bread squares topped with chocolate chips
Yield: 24 squares


Ingredients: (I made double the ingredients)
1/2 cup butter
1 cup sugar (I used 3/4 cup only sebab too sweet)
1 egg
1 teaspoon vanilla
1 1/2 cups mashed banana (about 3 medium bananas)
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup baking cocoa
1 cup chocolate chips



Instructions:
1. In mixing bowl, cream butter and sugar. Add egg, vanilla, and bananas, beating thoroughly.
2. In a separate bowl, combine flour, soda, baking powder, and salt. Add to creamed mixture and mix well.
3. Divide batter in half. Add the cocoa to one portion of the batter. Spread that portion in the bottom of a greased 9 x 13-inch baking dish. Spoon remaining batter on top, swirling gently with butter knife if desired, and sprinkle with chocolate chips.
4. Bake at 350 degrees for 30 minutes or until batter tests done with a toothpick or fork. Cool and cut into 24 squares.
